Your stat priorities should be:
1. +sta / +spellpower
2. +int (up to a certain degree)
3. +mp5 (probably don't have a lot of access to this at your level)
If your MB only took 1/15th of his health, chances are you're lacking spell damage or he partially resisted the blast due to being 2 levels higher.
Ret pallies suffer from relatively small mana pools and most of their dps is from their mana. If you can get a fear off, mana burn them 2-3 times and they'll be toast.

I have to agree that his stamina probably doubled yours since he has outlands gear. Oh, and he could have possibly been a 59 twink, i've seen those around.

You're QQing about one, ONE, 1v1 battle?! ONE? Personally, I don't think one fight vs. someone higher level than you is an indicator of how the entire class performs overall.

also, DoTs are a waste vs someone who dispels. he very likely had outlands gear. ret pallies pwn in pvp (i beat down a rogue & shadowpriest at the same time last night.... i had outlands gear & was full ret.).

they can open strong, but there's a gap in their dps (when everything is on cooldown)... live through the inital burst , then you can get a heal through vs their autoswing.

I, at 62, almost ganked a 70 moonkin in arena gear with my shadow priest. I also kill warlocks rather easily, and absolutely love SW:D. Currently at 65 with 315 spell damage(I think) I can mind blast and SW:D 1/4 or more of any toons health. I love the shadow dps. Being a squishy 65 compared to PVP geared toons, I am more then happy being able to take half their hp and still have dots ticking on them. Shadow priests have very low survivability tho, so you'll just have to get over it. You will get better once you get into full s1-s3 gear. Even better, go for t6 and nuke em before they ever reach you. =)
As for spell rotation, if they don't know you are coming, you can nuke em. If they attack you first, be prepared for a very painful fight. I got ganked multiple times by a lame back stabbing hunter the same level as me. Of course he can kill a squishy if he's got the first shot. A paladin dispells your dots, which makes them useless, yes. But if you VT, SWP, silence, mind flay, fear, mind blast, mind flay..... They will either have bubbled, or they are very very close to dieing if not dead. Just wait till Shadow word death. That will make you very happy. =)
