Varies by party.
Rule of Thumb: If your pickpocketing is causing wipes, stop pickpocketing
As a personal rule, I generally pickpocket anything I sap :)

All of my opener's have the macro along the lines of:
/cast Pick Pocket
/stopcasting
/cast
Saves time, makes money and helps level my lockpicking from the many junkboxes.
I don't often get it resisted either, I find my self pickpocketing Vanndar Stormpike very often ^^ I wonder what he was doing with that

1) Update yourself man, /stopcasting is no more needed in macros, it does it by default
2) Resist is based your lvl vs mob lvl just like weapon hit rating, but you cant increase your chance to pickpocket. Mobs same lvl than you has a 5% chance to resist it
What I dislike with my PP/Opener macro is when the looting lag a bit, I often end up with PPing the money, but the items (like boxes and potions) dont get looted. This ^&*! me off alot when it happens.
