New Rogue: Gathering vs. Crafting

I just rolled a Gnome Rogue and am primarily thinking 2 gathering professions. Skinning & Mining, however I know Herbalism has appeal as well. My other alts (2 70s, 1 39, 3 15) can all pick up the slack on most crafted non-BoP items.
So, should I select two gathering professions and if so, what do you recommend?
Is there any real advantage at high levels to have a crafting professions? If so, which one for rogue?

Well if u are good on gold i would say take two crafting ones. as opposed to gatherings.
you can make many nice BoP things that would grteatly benefit rogues, Engineering for one and JC for the other.
Make nice trinkets and REALLY nice epic gems, that are awesome. XD
