Drop LW, take skinning/herbalism.
Drop enchanting and take mining.
Drop JC, take skinning/herbalism.
At the point where you are now you can make 1 or 2 worthwile items. Consider instead that you mine and skinn your way throu while earning cash. If you see an item you would like crafted you yourself have the mats for it so just contact a crafter. I myself find it more fun to run around gather mats for something i want and having a frien make them instead of wasting all my mats i gather on mediocre crap.
Are the crafted epic good? Yes, definatley. Are they worth it? Doubtful. Wellfare epics futawin!

Ok, first of all, addressing the hunter:
Seeing as you've got your jewel crafting that high I'd hate to see you throw it away if you enjoy it & if you don't need to.
If you think you can slow down your profession skilling & dedicate most of your ore to being sold, either as ore or as bars (which ever sells for more or sells at a steady pace) then I'd say keep your jewel crafting.
If you think that you will be tempted to use most of your ore to skill up your jewel crafting though, then drop it & pick up skinning.
You can take herbalism instead but I don't recomend it simply because mining & herbalism both use a tracking ability to help you find harvest nodes & only one of them can be active at a time.
Be aware that keeping jewel crafting will make you less money in the short term than taking 2 gathering professions but is claimed to make more in the late, late game from rare gem cuts.

Now, Addressing the druid:
It really all depends on what you want to do with your druid but, leatherworking is a money sink without skinning. if you want to keep leatherworking, then drop enchanting & get skinning.
If you don't care about leatherworking, then drop it & take up a gathering profession like mining or herbalism.
Herbalism is my recomendation since druids can loot herb nodes while shifted.
Skinning is also a viable option, however it will not make as much money as herbalism by itself.
If you keep enchanting then you need to focus on the disenchanting aspect of it, buying low priced green items off the auction, disenchanting them, & selling the enchanting materials on the auction.
Be sure to use an addon like enchantrix to predict the result of the disenchant & buy items that will yield materials that are worth more than what you paid for the item.
If you decide that this all sounds more complicated than your interested in then drop both leatherworking & enchanting & pick up herbalism & skinning, both of these can be done while a druid is shifted & should serve you well.

I understand what you're saying about your druid's enchanting.
As far as the actual enchanting portion of it goes, your right, it won't really make you any money until the real late game & even then you'll probably make more money off selling enchanting mats that you've disenchanted from items than from any actual enchants (less time investment involved too).
If you don't feel that being able to enchant your own gear is enough of a boon to be worth the profession slot then I'd say drop enchanting & take up herbalism & skinning like your thinking of doing.
If you still like the idea of being able to disenchant your BoE drops or crafted extras or maybe want to take a crack at playing the AH a bit, then that level 20 alt sounds like a good option.
I've got one myself & he does a fine job of helping to pay the bills. ^^
There are some excellent guides out there on disenchanting for profit, mostly on forums like this one or allakhazam, I'm not going to link any though simply because there are plenty of people out there doing this already.
It shouldn't be too hard to find the guides but I'm not going to make it any easier than it needs to be.

dont bother with LW it doesnt pay off at allin the end, however jc is very useful.
find it opposite....the set is rly nice (for rogue atleast) and jc not pay that much "AWSOME!" that people think...its depend on server if tis profit or not=/
as just cut boring gems that worth barly anything and figurine who finnely get buffed....but in end....i will have skining instant of jc
