Well, dont sheep in start, or cast frostbolt. This takes to much time, time he can use to burn you down.
Basically, you need to get close to him, withing 5yrds so he can't use his gun. Rely on instants to dmg and save blink for when he tries to run away from you. Also if possible don't run where the hunter just ran, to avoid traps.
If he's BM you need to make him use it and then run LOS and use IB (BM is 18 sec and your IB only 10, so try to stay close to something).

Hunters are, of course, very hard to take down. Here are the strategies I use to beat them. (this is for frost. As fire, hunters are much easier to deal with IMO)
A) Kiting him. Kiting can work on hunters, you just have to trust in your frost elemental. Put your elemental on him and have it cast frost nova. If you can get it off while the pet is still next to him, you'll find things SO much easier. Believe it or not, you can EASILY out range DPS the hunter. Rank 1 frostbolt him and the pet (if you wish, not required) and then your frostbolt + ice lance. Even against strong hunters, a dual bolt/lance crit is going to take their health down by a third. After he Wraths up his pet to break out of nova and uses all his fancy shots on you, Iceblock. The key here is NOT to wait the whole 10 seconds. That gives all those annoying as hell shots of his time to get back up and you're back where you started minus the health. Then try to keep the pet frost nova'd and pelt the hunter with frostbolt, icelance. Keep him frozen and the crits will kill him fast. Cold snap will help if the familiar dies early. Hunters are annoying, but unless they catch you unprepared or are geared substantially better than you, you'll be okay.
B) Get close, and frost nova + familiar frost nova while spamming icelance and fire blast and arcane blast. Your DPS is insane, but if he pulls even one or two resists, you can run out of mana while running mana shield + ice barrier.
As a general rule, don't be scared to run Ice Shield. It reduces his damage and makes kiting the pet easier.
For fire, it's easy. Get up close and blast wave and dragon breath. Using Molten Shields is WAY better than you'd think. With the 10% chance to stun + rapid ranged attacks, he'll be stunned at least once throughout the battle. Same will happen to pet.
Now, it's easy to say. In practice, hunters do ALOT of damage. If they remove your shield and intellect, you're going to be in for a rough time. But as I learned long ago with both hunters and warlocks is to not freak out when you see their class. Alot of players see an enemies class and give up.
Oh, yeah. The cheesy strategy which can work, especially when you're with a group and doing world PvP.
ICe familiar, nova, icelance, icelance, iceblock, wait 10 seconds while familiar attacks hunter, cold snap, resummon familiar (dead or not), nova, ice lance icelance, iceblock.
He'll probably die unless he's got a HUGE amount of HP. And, while you will take damage, you won't take much. Giving your teammates time to help, but he probably won't survive.
