Anything you've heard about automating any aspect of the Fishing process is either outdated or illegal.
You can download an addon such as
FishingBuddy
for tracking some data related to fishing and a few other uses, but from there everything is going to have to be manual on your part. Just find some water, hotkey fishing, and patiently go at it.

Probably Ratchet and/or Menelthil Harbor, then move on to STV. After doing the quest out of Theramore to increase your fishing skill over 225, then move onto Feralas and Theramore.
I find Feralas to be the best for power leveling fishing. At lvl 70 the mobs will ignore you, and there are numerous spawns of Oily Blackthing, Firefin, Stonescale and Floating Wreckage. Only problem is when your bags are full, you have a bit of a trip to the nearest mailbox and/or bank.

I've used fishingbuddy for as long as I can remember and I can't think
of anything easier than pointing and clicking on the water to cast. If you
set your Character to autoloot you don't even have to click to loot the
fish. Anything easier than that why bother with it?
