If you are having problems holding off targets and the main target. Let the dps know. If you aren't doing heroics, the well geared dps can usually take a bit of a beating. Run some threat to the main, then run some threat thru each of the off targets in a row. The dps will pull the main target, but after you establish threat thru the off targets, either the main target will be dead, or you can taunt it off the main dps.
You can't do this in heroics, so hopefully by then you will be good enough of a tank, gear and skill wise.
If you and the main dpser have omen/ktm (threat meters), you can watch it that way and just make sure you stay a fair margin ahead of the main dps before switching targets. Generally, if you Tclap, you can hold the off targets long enough to build up some rage and lay down some threat before they start wandering. Also, if you have wandering problems, hit em with a piercing howl so they don't get far. And try to turn toward the dps when you tank, so you can see when they get pulled off you, catch them faster, and see who they are going for(not in raid of course).

are the dps-ers hitting the same mob you are putting the threat moves on?
whatever you sunder/devistate will attack you. thunderclap & demo shout is enough to hold aggro on the other mobs until you're ready to put some sunders/devistates on them. dps should not touch them until then.

You will find that using revenge on any target besides the main one should be more than enough to keep aggro on you. One revenge will hold the mob even through all the healing done on you.
Other than that, you can always use devastate by tab targeting. Smart groups will usually give you a second or two to grab the aggro. Thunderclap does wonders as well.

In addition to the above advise, you can also stance dance into berserker stance use berserker rage and go back into defensive stance (I apologize I can't remember the macro I use for this). Do this just as you pull then use bloodrage once you've aggro'd the mob(s). This will give you a good rage boost, which you can use to thunderclap and then put 2-3 devastates on each target. To cycle around I usually use tab, but if you have the hp bars above the mobs' heads (v is the default keybind iirc) you can click those as well. They do tend to move a lot if you or your camera is moving so make sure you're stationary before trying that or at the least very aware as to what mob you're hitting. As long as you communicate to your group that you will need extra time with the additional mobs you should be able to tank at least 4 (max hit by thunderclap) mobs at once. Once you get used to it and have practiced more you can easily tank over that given enough time. As a rule of thumb (if my group is having a tough time) I tell them wait for 2 sunders on the 2nd mob before attacking the main target as I shigt back and forth a lot to use shield slam and other abilities. This might work for you or you can just tell them to wait for you to call dps though that can be dificult if a) you forget or b) the dps is to impatient.
