I was going to say, "less survivability," but I think you beat me to it, =p
Fury has less viable burst damage & of course, lack of a tanking suit contribute to an easy death.
The actual armor that makes up DPS gear isn't going to compensate much against other creatures, especially if you're using partial leather or mail, which is sometimes the case.
Stance dancing? Well, to be honest there isn't a whole lot of stance dancing as any spec except Arms for PVP. Even then, the point of changing stances relies upon the decision you make about using a certain ability.
In other words, if you need to Intercept, you
will
stance dance to Berserker. Of course, you don't need to Intercept all the time --
it is situational.
