Ex: When I go up against a BOSS does this boss have crit chances too?
Also is RESIL more/less important in PvE?

Yes, bosses do indeed crit. The reason tanks try to hit their defense cap as early as possible is specifically aimed at eliminating the chance of being crit'd. Resilience is less important in PvE than PvP; however, if you're having trouble hitting your defense cap, resilience will help.

So I just don't know why RESIL wouldn't benefit if they do crit? Isn't it what it's for?
Basically I'm trying to find out if PvP gear (S1) with gems socketed required to run Kara would be benefical to PvE having RESIL.

No. I'm not wanting to get hit as a hunter in Kara (we all know that) but since my gear will have Resil in it since its S1 with gems socketed to qualify for kara, I wanted to know how it would benefit me as a hunter having RESIL.
How many hunters go in Kara with S1?

Enemies have a chance to crit; bosses can both crit and perform "crushing blows".
A crit is specifically defined an attack that does 2 times the normal damage of the attack. If a baddie would have hit you for 400 and he crits, he instead hits you for 800. The chance to crit is determined by the level difference between the attacker and defender, the defender's Defense rating, and so on.
A "crushing blow" can be done by any mob that is three or more levels higher than the target (i.e., most bosses in raids are considered to be level 73 elites or better). A crushing blow does 2.5 times the damage of the normal strike.
This is why most Tanks shoot for a combination of Defense rating and damage avoidance (Dodge, Resilience, and the like) to become "uncrittable and uncrushable" so that the chance for a critical strike or crushing blow is either far down on the enemy's hit table, or pushed off it entirely.
