Spell hit is obvious - for a destro lock, spell hit capping is crucial as you aren't running many dots. Every miss is therefore amplified, and even worse a higher miss chance cuts into your number of critical hits.
25% crit is important because the one buff the destro lock provides is Improved Shadow Bolt. At the very least, he needs to keep it up for himself. Four charges, 25%... It'll be up most of the time for him.
1000 spell damage is approximately where, combined with the other numbers, destro begins to outdamage affliction builds on bosses. Destro will generally have an edge on trash before this - but trash dps is unimportant in a raid environment so long as you have enough of it.
Felguard builds are nuking builds - at low gear levels, the bonuses gained to spell damage, crit chance, and overall damage combined with the not insignificant melee damage of the felguard make it competitive with afflction builds for overall damage (though they suffer in fights with significant AoE, as losing the pet loses most of the bonuses). The straight spell damage bonuses on the demonology tree do not scale as favorably as the percentile bonuses on the destruction tree, so it gradually loses ground.

on the question of 'where do you get 25%crit and 1000+dmg' i refer you to dunsinane's excellent 'care and feeding' posts here which really need a sticky. i wish i'd had a reference like that when i was gethering gear together pre-kara.
