Don't forget about engineering however I would recommend Jewelcrafting over Blacksmithing any day. As a tank warrior, there are no real benefits from the bulwarks and I presume the same would be true for pallies. JCing allows you to make all those cool gems needed at the higher levels anyway.
Engineering has a couple thing that could be useful however I would still go with JC.

Jewelcrafting! I'm a 70 squid Prot Warrior and there is nothing outstandingly useful in Blacksmithing-Armorsmith.
