If you plan on keeping your paladin through WoTLK, you should probably keep BS. They've said in the past that they plan to do more with it. Who knows? What if there's a set of seriously awesome craftable gear that will put you ahead of the game in the expac (much like Primal Mooncloth and the other tailoring gear did near the beginning of TBC)?
It's not like gold is difficult to gain in this game anyway. I play a prot paladin with blacksmithing and I've never had any gold issues.

if you have a level 70 holy paladin, from now to WotLK, you have enough time to invest in and benefit from other professions
Engineering is a good example since it has goggles that rival T5 helm
Enchanting is nice for that boost in healing (rings)
Jewelcrafting is nice for the epic gems and figurines (talasite owl for MP5 and ruby serpent for stam/int)
Tailoring for Primal mooncloth set (twitch)
