I had this same problem when stealthing as a rogue, it's actually surprisingly easy. Open your Bartender3 configuration window for starters. Then locate which bar is assigned to the stance you want to change to, it'll probably be bar 7 or 8. When you find which bar it is, click the "+" on the left-hand side of the configuration window to expand the bar options, then click on the new options tab that appears. At the bottom of the right-hand side of the configuration window, there will be an option labeled "paging," open the dropdown menu and click on the appropriate stance. :)
