It's absolutely possible.
I play a shadow priest and similarly have never put out numbers that high. Unfortunately for me, our guild has a shadow priest that will sit around 4k dps on patchwerk. His advise has been to maximize dot uptime and efficient spell rotations. His approach has been similar to that of a hunter.
I can't entirely figure it out for myself, but every time I raid, I get to see it done.

I don't know his specs, but a shadow priest in our guild says he averages around 4k and 4.6 on Patchwerk. Have no reason to disbelieve him :-)
Shadowpriest.com has a wws thread on patchwerk and the highest dps there was 5084, but many 4.5-4.9's.

I regularly do about 3.5k DPS and I've got quite a few upgrades to go, but mainly the idea is to stack crit over haste (as it improves the uptime of IST). Just make sure VT is up and keep MB on CD as often as possible with mana. Then MF for filler (but try not to cut off the ticks).
It's a little more haphazard of a game we play now tbh... but I've regularly been a high (or top) caster DPS in raids, so you definitely have the potential.

Yes I would also say it is very possible to reach 3.4k dps as a spriest. As a spriest in the 25man naxx I done last week, I averaged 3.4k dps for the entire raid and was only behind a mage and a hunter. So it is possible to do that kind of dps. I do have to agree with what simixiz said though, it is about doing the right thing at the right time.
I have found that this starting rotation has been doing good for me so far to reach that dps. SW:P, DP, VT, MB, SW:D, MF. I'm sure it could be tweaked a little to get a bit higher dps, but I just haven't done it yet. Hope this helps a little.
I could be totally off here since I'm still figuring out a good rotation for myself but doesn't it seem that putting SW:P right at the beginning would give you minimal ticks? Since your initial SW:P should ideally stay up for the entire fight (on static fights anyway, since we're talking about Patchwerk here a lot), by putting it first you'd be missing out on 5 stacks of SW plus a possible proc of IST? I would use something like this as my ideal rotation (especially if you have an on-use spell power trinket):
DP,MB, SW:D, VT, MF, trinket, SW:P and then depending on your haste etc. This way you get your highest possible spell power applied to SW:P and from there you can keep it up the entire fight.

VT > DP > MB > SW:D > SW:P > MF works best for me ATM (pre-3.08)
The reasoning behind this opening spell rotation is that SW:D is bugged atm and will give you 2 applications of the Shadow Weaving debuff ( i think its because it damages you and your target ) so once you get to SW:P , you're already at a full 5 stack buff and you'll deal 10% more damage on SW:P as long as you keep it rolling
If you open with SW:P , since you have no shadow weaving buff on yourself and since you keep it re-applying the initial DoT with mindflay , you will never benefit from the +10% damage increase.

The one thing i find that helps me to keep a steady dot uptime and rotation, only put 4 pts into reduced MB cd. and use it whenever it's up, you'll get into a nice rotation. I do regularly 3200-3400 dps with 2k spell power and about 15% crit.

that's on bosses with medium level running around. Patchwerk i can't remember what i do. I know on Vault I generally do 4.3k if that helps.

i just did nax10 (last 4 bosses), os, and malygos with some guildies, and rocked > 3300 DPS on all the bosses with little movement. on patchwork, i do over 4k easy.
