Almost 2 Years to the day!

Way back in WOTLK and the start of Cata, was the last time I played WoW. I dinged 85 and fell ill with swine flu and then pneumonia, which got me put into a coma for many weeks and took me all of 2011 to recover. I've spent most of this year building my strength up and I am now finally able to work and play online again.
Obviously there has been some massive changes since then and I am a bit lost where I should really start.
My UI and Add on's are utterly screwed and I can't for the life of me seem to get OUF_Orb's working in any way, other than having a really nasty D3 type of skin to everything else. I've browsed through cursed and on here and it seems noone really likes this UI any more due to D3 being out and being rather S***.
So my first question to all is, what is a nice clean UI that works well with DK's and is fairly straight forward to customise and easy to use?
With the level cap now being 90, I have started doing the quest chain that takes me through the new areas. Is this really a wise move to do, because as you would expect, my gear is shocking to say the least and I have not done any advanced Cata content other than leveling to 85 during the first week or so of Cata?
When I saw these new talent trees, I was more than my usual confused and I quickly managed to find a cookie cutter Unholy spec for my DK ( I prefer to use 2H weapons over dual wield ) but from reading a few posts and comments, it does seem you can tweak the flavour to suite the player. Can someone be kind enough to point me in the direction of a solid DK guide for this latest version?
Finally, my char got moved from EU Kul'Tiras to EU Frostmane and I do not know anyone or anything about this server, I am mainly a PvE player, but because my friend is also coming back to play WoW with me and being a PvP junky, I want to go to a server that will be balanced and friendly to play on. What are the best servers on EU that I should look at moving to? With two of us on different servers we are trying to minimise chopping and changing to find the right environment of a good PvE aspect, but also one that can hold it's own and give a challenge with the PvP. I'm currently a DK Gnome, but have been told that Horde tends to give the better PvP.
I apologise for all the questions, but with so many evolutions and changes happening in the last two years, I am at a loss where is a good point to start reading from and develop my char again. Many thanks to people who can give me genuine help in finding the right answers and pointing me in the right direction. It has stunned me how much I have forgotten in these two years and just how much of a total noobie I feel. With so much information on here and Tankspot , it has just been completely overwhelming to say the least!

That is a great help! Thank you for taking the time to reply to my thread.
My first real aim is to get to 90, so knowing gear is not a massive issue to gain, I can focus my time much more effectivly.
I am lucky that I did spend a lot of time building a stockpile of gyphs prior to me stopping in 2010, so I can work with what I got until I have some serious gold behind me. My professions are both in the 520-530 area, so I can boost them up as I level to 90.
I'm really pleased that it does not seem a massive task to achieve my first goal. I am hoping to get to 90 before the end of the year. Then in the new year really work on devloping my char and my skillbase for PvP.

Welcome back, that must have been a rough two years you've had. I'm happy to hear you're doing better!
Doing the quest chains is indeed the way to go. You may struggle on the first few, but it'll be fine if you're careful, and the quests will give you gear to replace your old pieces! Don't forget to do each of the dungeons once for dungeon quests - extra XP and gear.
Talents are, as mentioned before, mostly up to you, and until you raid or do BGs/Arenas, they won't be a problem. However, if you want to read up on your class, I recommend Wowhead class forums.
Getting to 90 shouldn't be an issue at all. Once you're there, there is a nice new world boss around, called Sha of Anger - find a group for it in trade, it drops quite nice gear. There is Galleon as well, but he's a rare spawn.

Again thank you for the replies.
I was so very active and then to suddenly stop for two years, it just amazes me how much has changed.
It's nice being an old member on here and coming back to friendly replies. I think it makes a better impression than just making a new account and rudely asking for every ones help and expecting the moon on a stick.
Arissa, my char is called Félìx ( I use a weird e and i , so copy and paste from here ). It will be nice to have someone in game to ask various questions ( lucky you lol ! )
I've just found out I have all of next week off from work, so some uber hard core gameage is ahead I think's!

Make good use of Dungeon Finder while you level up (the I key). They have done a rather nice job of handling the dungeons, you will have access to two at level 85, and add two more at 87. It will help build up confidence in grouping again, and really help you decide what talents and glyphs you like best. You will be well on your way at level 90 for all the heroic dungeons, raids, and scenarios you will have access to.

Oh yeah, the best reason for using dungeon finder is you can keep questing to level up while in the queue, rather an easy and painless way to go dungeoneering.
