Generally, humans for PvP because of their free trinket.

Dranei for DPS classes for their +hit.
Dwarves as tanks for the -damage CD.
Not sure about healing classes though.

Both have guides talking about which race goes well with each class. For PvE race doesn't do so much for dps, it is usually best to pick the one you like to look at.

The problem with PvP abilities is that they're mostly very situational. People could argue for ages between Warstomp and Arcane Torrent.

And yeah, forgot about Worgen and Goblins. Pretty sure those are the top 3 DPS races.

P.S. If I recall correctly, Worgen are the top DK DPSers.

Yes that is correct with Orcs and Goblins not far behind.

I still play my dwarf DK though
