Any Druid tank will spec SotF. However being uncrittable doesn't negate the usefulness of defense, even for a druid. Don't forget that while def adds a moderate amount of dodge (is this dodge subject to the diminishing returns?) the real stat is the "chance to be missed." Defense still appears on plenty of gear that druids desire, and since druid avoidance has been reduced significantly from BC levels, every little bit of Boss-chance-to-miss adds up to be useful avoidance.
Threat generation does not appear to be an issue yet in WotLK, and the stam from this gem is useful as well, easing some of the stress healers seem to facing in early WotLK raiding.
I will admit however, that
Glinting Monarch Topaz might be the better choice for a druid to fill those yellow slots with if their HP pool is high enough.

A gem that is almost as good (+7 Def and +11 Stam instead of +8 Def and +12 Stam) but usually much cheaper to get is Perfect Enduring Dark Jade.
