I had trouble discovering Ironstone Plateau. You actually have to travel up into the mountain area to discover it. This confused me because it was the last area for me but it was still not filled in towards the center of Un'Goro and I had been all over it.

for ironstone plateau just go to 77.9 40.7 and keep heading east and you will find the area

i went to 74.6, 32.1 and went up a little hill and discovered it at 75.3, 32.1

You can also discover Ironstone Plateau from Tanaris, by standing above it on the mountain side, looking down at Un'goro!

Like others, I wasn't able to find "Ironstone Plateau". I couldn't find the right place to climb UP the hills. But, I was in Tanaris later on by chance and decided to see if I could get to that part of the map by jumping into the crater. Well, I was on the rim of the crater in Tanaris near the very NW part and found this region and got the achievement.
Blizz might adjust this in the future, but I still think it will be feasible to find this section by jumping down into the crater from that corner of Tanaris.

You can also go for doing the 45 quest achievement... When you with quest 44 get to The shaper's terrace you can just turn left before the enterance and too the edge.. That's where I got my explore :)

I found Ironstone Plateau at 75.9, 32.4. I was heading to the first listed coordinates and saw what looked like a path on the eastern side of Un'Goro in the "2 O'Clock" position. It wasn't really a path but it took me up a bit and I was able to discover IP.

Fungal Rock would be at the 1 O'Clock position if you look at the map like a clock. I didn't see it listed here, but I believe you discover it during a quest anyway and it's needed for the achievement.

I don't know the coords or how to make the handy map but I wanted to add that Fungal Rock is in the Northeastern portion right above the two little lakes with Lakkari Tar Pits to the west and Roiling Gardens to the east.

while looking here for info my toon died in the marshlands( that's on the east side ) and my ghost spawned in graveyard up in the mountain right by shaper,s terrace so what the hell did resurrection there and ran to the north a tiny bit jumped down hill and got achievement. so ya rez sickness might not be in your plan but if your having trouble finding the right slope to run up it might be worth it.
