I found this battle pet by pulling a Shadowrooted Vine near the Stillstone Pond Keyflame location. You are able to pull the vines if you have the buff Shadowrooted Grippers, which is from the item Darkroot Grippers sold by Chef Dinaire for 3x Radiant Remnant, who is summoned by lighting the Lesser Keyflame at his location.
I also had the item Patrol Torch's buff active, but am unsure if this is part of what gave me the pet. The torch is sold by Yorvas Flintstrike for 5x Radiant Remnant, who is also summoned by lighting his Lesser Keyflame.

As a note when receiving this - it will automatically appear in your bags instead of a Radiant Remnant after you have finished pulling the vines along Stillstone pond.

Just to clarify everything:

Towards the north side of Hallowfall are Key Flames. You charge them with Radiant Remnants. 3 Radiant Remnants are required to charge the Lesser Keyflame at 64.42, 30.96.
This will allow you to interact with the NPC Chef Dinaire. They sell the item you need -Darkroot Grippers- to give you the buff. This also can give you an Umbral Eggplant which starts the quest Invasive Cuisine.
With the buff from the Darkroot Grippers go to the Stillstone Pond area and look for vines. They can be hard to see so you can use /tar Shadowrooted Vine. Interact with the vine and pull until it breaks. This automatically gives you the loot, which is typically Radiant Remnants, and a small chance for the pet. The pet is auto added to your bag - you do not need to loot it or battle the pet. You can loot multiple at a time and have them in your bag.

I found this easiest on a druid in flight form. I just flew around with a /tar Shadowroot Vine macro, hit the interact key, fly away and repeat.
No need to fight anything
No mounting/dismounting.

Just to add my experience here, I farmed the Shadowrooted Vine a ton in the Whirring Fields and areas around the Chef from whom you buy the aforementioned grippers to no avail. After focusing specifically on the Stillstone Pond zone (literally making sure i only grabbed the vines when the zone map noted I was at the Pond, it only took maybe 10 or so vine pulls. So, that could be RNG or just anecdotal, but I'd recommend focusing exclusively on the Pond and not veering into the Fields nearby.
