Pre-nerfs, the NPC with the most HP used to be 25H Ra-den. His HP would increase with each mistake made by the raid, and eventually the numbers got to big it went into Overflow.
In short, overflow is when an arithmetic operation attempts to create a number that is too large to be represented within the available storage space. Like an analog odometer in your car marking how many kilometers/miles you've traveled, they have a finite capacity, and once they reach 999.999, rather than go to 1.000.000, it simply resets back to 000.000
That same problem happens with world of warcraft. The game stores all its numbers (be it for damage, HP, gold, whatever) in a 32-bit
Integer. This means the largest number this game can possibly handle without crashing, or otherwise behaving unintended, is 2^31 - 1. Or 2.1 billion.
2.1 billion is the largest number this game can crunch, and if at any point anything goes above that, things get whackier. This is the main reason why we're having an item squish on the next expac, because boss HP literally can't go any higher without breaking the game, or needing a complete rewrite of the code.
Currently, the boss with the largest HP pool in the whole game is Heroic Thok The Boodthirsty on 25man mode, with a 1.9 billion HP. But most other bosses, use roundabout methods to inflate their total HP without actually having that much HP. This is why Garrosh heals to full HP twice during his fight, or why almost every encounter in SoO has dozens of waves of adds incoming.
TL;DR: Current NPC with the most HP is (Unless I'm mistaken) Thok the Bloodthirsty in 25man heroic mode. At 1.9 billion HP.
