There are two fungarian delves available to complete this achievement:

Fungal Folly in Isle of Dorn
Mycomancer Cavern in Hallowfall

Did it with a pally tank, limited mobility and dps, after much trial and error in both delves. I got it in 2 tries in Mycomancer Cavern with The Great Scavenger Hunt Story. The first gathering is in the water away from spores. The middle stuff is amongst spores. The end boss spawns spores, but he announces, and you can run away from him and the spores which just explode on their own, and don’t build up or chase you.

I completed this on my Ret Paladin, Brann on heals, in Mycomancer Cavern - story Missing Pigs. I don't know if there's an easier story to complete this on as this is what was available at the time and my first attempt for this achievement. I took my time to avoid the sporbit's the best I could, died a couple times pulling too many mobs on accident, but did not get hit by any spores. I did aggro some spores during the run but if you can get away -before they explode- then you are still good to go. I kept and eye on the Combat Log chat, "What happened to me?" so I would know along the way if I was hit by any spore damage, ruining the achievement chance. I would say pull mobs to you when you can and steady wins the race.

Managed to do it easily during Mushroom Morsei Story at Mycomancer Cavern.

Since you kill the boss at beginning of the delve, just use Instance Achievement Tracker Addon to announce if you fail, and if that happens just exit and start again. For the rest, just have to kill adds, slowly to not explode any spore.

Just to clarify: Touching the spores and "activating" them, does not null the achievement. Only get hit by them after they've been "activated" does. So don't panic if you activate them. Just run away. Plan each step carefully and look for a "run to" points in case you activate a spore. Ignore any nodes or bonus XP. Slow and steady. Plan ahead. As mentioned in other posts, if you activate a spore, you can kite it around and when it blows up it will damage nearby enemies. You can use that to your advantage!

If you're doing "Scavenger Hunt" the boss at the end is easy: there are two islands. When the boss starts to cast "sporesong" run to the island to avoid the spores. rinse and repeat.

I was able to complete this in Fungal Folly during the Explorer's Competition story as a Fury Warrior. As others have said, slow and steady is the way to go. Was able to get to each explorer without so much as aggroing a single spore, although Heroic Leap did help in this regard.

For the final boss, I kited him to the large rock at the southern end of his platform and then hugged that rock for the entire fight, whilst at the same time trying to avoid or mitigate as much damage as I could. Jumping on top of the rock seemed to work okay for limiting damage from the fungal explosions, but the real key is to avoid his charge which can either knock you off the ledge entirely or knock you in to one of the groups of spores which is an added complication you don't need.

Brann was in healer spec with the Porcelain Arrowhead Idol and Amorphous Relic curios.

FYI to Pacifist Rig enjoyers, I had to try this twice on Funal Folly. I THINK this achievement doesn't count if you get hit by an explosion while you are piloting the Pacifist Rig, which technically makes you immune to damage but likely still counts as being "hit." I switched over to Biofuel Rocket Gear as my Utility Curio instead and got this on my 2nd try.

In 11.2, if you're lucky to find an Ethereal Portal, it will count for completion for the achievement, just did it this way in Fungal Folly yesterday.
