Kura is part of the new dailies introduced in patch 6.1. She is a traveler, so will most likely be part of a rotation of visiting pet trainers.

She uses 2 flying spore bats and an elemental pet. The second sporebat opens with a stun.

Nether Faerie Dragon(2,2,1) makes short work of the entire team. Moonfire and then arcane blast will annihilate the two spore bats. Save the life exchange for the elemental pet and finish with arcane blast.

Kura Thunderhoof was added to the menagerie in your garrison in 6.1. You can interact with her by visiting another person's garrison if she is not present at your menagerie that day.

The quest can be completed once daily per account: Critters of Draenor. (Alliance's equivalent: Erris the Collector / Critters of Draenor)

The team you fight can vary day-to-day.

Set one (strat): Spores + Dusty + Salad = weak to Magic, Magic, Aquatic
Set two (strat): Nicodemus + Brisby + Jenner = weak to Beast, Beast, Beast
Set three (strat): Sprouts + Prince Charming + Runts = weak to Aquatic, Flying, Mechanical
Set four (strat): Moon + Mouthy + Carl = weak to Flying, Flying, Mechanical
Set five (strat): Enbi'see + Mal + Bones = weak to Magic, Magic, Critter

Three things about the above-listed pets:

Unlike other battles, the pets in this daily have a full 6-ability pool from which to pull their attacks (where most other tamers' pets only have 3 attacks).
You are not fighting legendaries or epics, making these fights more "doable" than Grand Master fights, etc. Most are rare quality, but there are some uncommon and there is even a poor quality pet.
~~At first, this daily would give a very healthy bit of pet xp. This has since been reduced.~~
- Looks like the xp might be back for this daily as of 6.2.

The Traveler's Pet Supplies you get from quest completion has a small (~3%) chance to contain one of the following: Bone Serpent (becomes Bone Serpent), Slithershock Elver (becomes Slithershock Elver), or Young Talbuk (becomes Young Talbuk).

Copying and adapting Solitha's post for Erris the Collector:

Kura Thunderhoof has a chance of randomly showing up in your garrison, near the Menagerie. She offers an account-wide daily pet battling quest, using one of several teams.

Each team is of a certain pet type, and their abilities pull from the full pool of six abilities available - just like a player's pets. Therefore, every time you engage in a battle, the pets can display a different combination of their abilities.

There are actually 5 different Kura NPCs. I'm guessing that each one has a specific team, so I'm going to try to catalog them as I see them.

Vs. Sprouts, Prince Charming and Runts I used:

Viscidus Globule with Acid Touch, Poison Spit, Creeping Ooze (2, 2, 2)
Carry pet (1+)
Clockwork Gnome with Metal Fist, Blitz, Build Turret (1, 2, 1)

Today I fought the Sprouts/Prince Charming/Runts combo, and I noticed that they were all level 23.

I have more than 75 pets at level 25, so it's unlikely that it scaled down for me.

Something that may be of interest to others that I noticed: Kura was in the Garrison of one of my alts but not my main toon, so I accepted the quest on my alt with the intention of going back and doing it later. I logged into my main, and Kura had then appeared in my main's Garrison (I assume because the quest is account wide).

The proceeded to solo with Ancient Next Guardian. I like the Iron Star idea below, I just have not leveled one past 20 yet so will be rectifying that today

The set of pets lead by Nicodemus, can be solo'd using Bonkers with Going Bonkers! + 2x Bite for all 3. This leaves 2 slots open for leveling pets.

As of April 03, 2015 battle pet experience for winning the fights against all versions of Kura Thunderhoof and her Alliance counterpart, Erris the Collector, has been nerfed into the lithosphere, supposedly temporarily, to address an exploit.

Bashiok explains the change here.

I have good success against ALL of Kura's teams with the following:

Emerald Proto-Whelp (222)
Sprite Darter Hatchling (221)
Nexus Whelpling (222)

Versus Nicodemus, Brisby and Jenner.

I have had 100% success with Emerald Proto-Whelp P/S (2,2,2).

I started with Emerald Presence and refreshed it as soon as it got to one round remaining. I used Emerald Bite as a filler until I had around 400 hp remaining, then move onto casting Emerald Dream to regain the health lost.

Brisby does have the Call Darkness ability, which can hit hard so if you struggle add a Sprite Darter Hatchling to your team with (2,2,1) and remove the ability by casting Moonfire. Then switch back to your Emerald Proto-Whelp and win.

Depending on whether you have to add the Sprite (I haven't needed to), there is room for adding in one or two levelling pets.

My setup for Kura is always without fail Anubisath Idol (111), Chrominius (212), and Amber Moth (212) but any moth or flyer may do. Anubisath Idol usually takes care of it, but you may swap out your fighter based on who has the advantage for the fight, or just run through each of them. I have not lost a battle against Kura yet using this method, and have all of the pets she offers. If you go into battle this way every time, you will always have the appropriate pet for whichever fight she brings you and never fail.

I'm not sure if it has been mentioned before, but if ever she is not in your Garrison that day search the Custom Premade Groups and someone almost always has her and is offering to have other players join them at their Garrison. That way you can battle her every day.
