My Favorite encounter has to be the Lich King because of its complextity and the team work it required.

As a feral kitty druid back then, I always felt odd because a moonkin always had mana until the end of the fight, while I ran out of energy every 5 seconds. I got depressed because I felt I had to push buttons 5 times to do one ability, due to energy loss. Once I fought Vaelastrasz - I still cannot pronounce it, but I can type it - The Corrupt, everything was so much better. I never saw energy below 50! I got to hit buttons so fast my fingers almost fell off, but the big numbers flashing across my screen were so cool! I've never loved a boss like I have him, just because of the fact that there was no ability I couldn't hit on a whim, just because I had energy to spare.
I am going to have to say Shade of Aran that fight had everything lore, fun mechanics, and of course all the hijinx of the door boss and people raging and blowing everyone up
I have to say that Mimiron in Ulduar is my favorite encounter ever.I began tanking in 3.0, I remember heading in to Naxxramas without a clue what was in store for me. That night we spent a few hours wiping on Anub'rekan, and our guild leader was honestly impressed that the rag-tag group of non-raiders I went with managed to get him down to 20% once. Fast forward about six months, and I find myself tanking progression Mimiron.I love Mimiron primarily because to me, it was the culmination of all my tanking efforts. It taxed every skill I had as a tank, from threat generation, to cooldown management and planning, to dodging about seven different varieties of fire. When we finally defeated him a few weeks later, the cheers were loud and long, and there was much rejoicing. To this day, I still carry my Ground Gear around with me as a trophy; I got the junk loot from our first kill.After that, I retired my Death Knight from tanking, I found that I much prefer healing on my Priest. I'll always have the memories though.
To me it would actually have to be Maexxena. (Last arachnid in Naxx) Because it was my first real raid kill at level cap, having started in wrath when raiding Naxx was THE thing to do. I had hoped to get to 80 before Ulduar came out and was rewarded by being invited to my guilds kill. My very first PvE epic dropped there as well. I was I believe an unholy DK at the time and her polearm was quite bad for me. However, it was a good upgrade from my green weapon. I remember runeforging it and trying it out. It was great! The mechanics of the fight itself were quite simple, but I remember it quite fondly. We all cheered on vent once she was dead and called it a night. That was also our last raid all together, the group kind of fell apart after this. Most of the people left the game. However, I do remember this from time to time with one who is still here.
Archimonde. Three reasons:1) The mere fact that you are playing your center-stage role in defeating one of the greatest destructive forces in the WoW universe. Defeating Archimonde is probably one of the sweetest tasting lore events any player could ask for. Hearing Archimonde's despair at his loss, finishing him off while under the protection of Elune, watching the wisps blow him up (and yet recognizing the cost of this action)...simply amazing. Of course, before any of that happens many wipes have occurred, and I dare say even those are something one should regard in awe, reminders of Archimonde's great power and the challenge that you're undertaking (if you've ever brought Archie too close to the Well or taken too long to bring him sub 10%, you know what I mean >XD)2) The fight is simple, structurally speaking. It really only has one phase. However, the boss fight has some of the most punishing mechanics I know of. You can't just sort of know what happens, you have to REALLY master the mechanics to kill the boss. Managing the doomfire placement. Having that high degree of personal responsibility by using the Tears properly and not getting feared into fire. Decursing like pros and keeping the tank up despite the fact that's he or she is getting hit by a dump truck (and because Archimonde had a lot of health for his day, keeping that performance up for a long time) . Failure to do these things meant you'd be unable to heal through the damage, and people would die. Deaths meant Soul Charges, and depending on who died could multiply the difficulty of the fight by a large factor. If I could suggest a mechanic for Blizzard to employ more often, it would probably be something similar to Soul Charges.3) The epic lore and the harshness of the fight being accentuated by Archimonde's battle quotes. Yeah, you could say that listening to the quotes by themselves are pretty blah, but when I remember when I was in the thick of it, healing on my pally and hoping upon hope the tank wouldn't die...I would hear "THIS WORLD WILL BURN" and just cringe because we were just starting attempts on the boss and we hadn't mastered doomfire management yet...ahhh, fun times.
Dun Morogh! There is at least one path you can take to get high up on the mountains above the quarry. The wind, the snow, and the view are excellent.
My favorite right now is Rohash from ToTFW just because i can pull aggro and not get 2 shot as a dps.
I love the mechanics on the new Bloodlord Mandokir, although my -favorite- would probably have to be Omnotron Defense System. I love the mechanics of that fight, too.
I actually enjoy remembering Magmadar in Molten Core when that raid was fresh. No one had Tranquilizing Shot until your raid party downed him and it was FUN being feared all over the place. So many wipes to finally get him down and then only one hunter would get the spell tome. What was better was next week when your raid assembled again the one hunter with the spell was MIA...LOL.
My favorite boss encounter has to be...Herald Volazj from Ahn'kahet: The Old Kingdom. (added in Wrath)Theres so many reasons for him to be my fav. For one, hes just plain weird looking, so you dont really know what youre up against the first time you fight him. Then, theres that insanity ability where you have to fight your teammates, then fight him. (This makes it especially fun if you dont like the PuG members you have!)Finally, and for the third reason why Herald Volazj is my favorite boss encounter is that his ability is one of those specials where you dont just hit him till hes dead, you have to work with your team and think on your feet. This helps keep players awake at 4 am when they just ran out of energy drinks and think theyre going up against just another AI. The third reason is what makes me like Blizz as a company, because they come up with creative, original dungeon tactics that can surprise and yes, even annihilate, their players, and dont care about what all the trolls say about how "theyve ruined a great game", because they came up with the old ideas that were great, so the new ones are bound to be even great-er!"Thats all i got to say about that." Original Rag. The first real multi-phase fight. He's UP! Kill him.... Crap adds... Get the off me!
I have a lot of enconters that i like.. to choose one is hard. But i decide to choose LK. It is a fun fight, a lot to keep in mind. We have struggle a lot with that fight. I still remember how satifyed i felt when we finaly manage to get him down. Even if we are lvl 85 now.. there are mechanics in the fight that we need to aware of and do right.
I would have to say Ragnaros in MC. He was my first raid boss to take down, and I love the pacing. Even better now that I have my little 'rag out every time I help someone out for the eye.
My favorite encounter so far has been ToGC Anub'Arak. I love that encounter because my guild had so many close calls over the course of many attempts until we finally killed him and I got my awesome sword :)
Viscidus because nothing beats 40 minutes of "DAMMIT SHATTER HIM!" Oh memories :p
