Your problem is you and (many others) equate the game with LFR.
LFR is tourist mode, it was created to allow those with no time to really raid to see the content instead of missing out as many did back in BC.
It is an insult to raiders to say that LFR is end game raiding, so please do not compare this noob mode to anything other than the instance viewer it really is.
If you feel LFR dumbed down PvE then the fault is with you, and I'd say if you had that impression then you can't have really been doing PvE correctly.
If you were actually raiding as part of a progression group then LFR should have had zero impact on you or your feelings towards your game.
All it has ever done is maybe supply a few pieces of gear now and again to assist in gearing for real raiding a little quicker, but not really offering any distinct advantage over real raiding.
I think MoP is a great expansion, Yes there were a lot of dailies to begin with, I never did any and still raided pretty much from the get go.
I think you've done yourself a dis-service by listening to your friend.
PvE is what you make it, End game Heroic raiding is still a challenge, LFR isn't
There are plenty of challenges to be had in MoP.

the
fact
raid finder was dumbing down the pve i loved so much
This is not a fact. This is an opinion.
Everything else I had to say about this was already covered by JK (TL;DR raid finder was made for those who don't have time to do real raiding, its just there for you to see the content, and it has nothing to do with real raiding. Real raids are as challenging and as engaging as they've ever been. This expansion produced some of the hardest bosses ever seen)
Its a little telling that SoO is so far the first (and hopefully not last) raid that blizzard has decided to NOT nerf by 20-30% thus keeping its challenge intact for those who crave for it.
I guess i might return to wow, depends how ESO turns out to be
One doesn't preclude the other. Its entirely possible to play one, then take a break and play the other. Games are not mutually exclusive, and even I, a staunch fan of warcraft, still take a break to play a different MMO for a month or two when I'm done with current content.
, besides rumours about project titan alsp stirred up my curiosity
Project Titan is gone. Blizzard has frozen it and put it on ice until further notice. All teams working on it were reshuffled to other projects.
This doesn't mean Titan is canceled, but for the time being nobody is working on it, and since the previous project blizzard put on ice (Starcraft Ghost) hasn't yet seen the light of day, I think its safe to assume that until blizzard says otherwise, this game won't see the light of day for a long LONG time.
I heard ppl in mop dont even ask for cc, they just join a grp and rush dungeons tank and spank
You obviously haven't done the trash before Garrosh. Even in LFR those guys are NASTY (Hell, in LFR that trash is even harder than the other two bosses put together)
from the perspective of a player that does 99% of his wow gaming on pve is the game still good?
Yes it is. Whereas before there was only one difficulty mode suited for a very small fraction of the playerbase (you could probably count with one hand how many guilds stepped inside, let alone cleared, naxxrammas on each server on vanilla) today there's multiple difficulty modes to include as many people as possible, since there's LFR (Super-really easy) Flex (Mildly-easy) Normal (Challenging) and Heroic (Super-challenging)
Also MoP is probably the richest expansion in terms of content you can do, since you can raid, do dungeons, scenarios, proving grounds, brawler's guild, timeless isle, pet battles, challenge runs (REALLY HARD these ones, not for the faint of heart) rare hunting, and a lot more.
As good as wotlk?
Better. Since they're no longer catering to just a small fraction of the community. Now regardless of your tastes, the game has a bit of something for everyone.
Or is it a basic, dumbed down, boringly easy and anoyingly fast game?
Its not. And if anyone says otherwise, ask them to link their Heroic Garrosh kill, or Proving Grounds Wave 30 achievement.

How much you worry about gold depends on what your own preferences. Personally I haven't had to sweat gold through out the entire expac, between dailies, professions, etc.
If you dislike daily quests, Sunsong Ranch is an alternative. It is still a daily but is a quick 10-20 minutes maintenance a day, and a non-stop source of prof mats and auctionable materials.
And as someone who still plays almost daily but hasn't seen a lick of raid content since Cata, the game is even better now than ever.
If I may answer your questions :
1. Leveling in Pandaria was great. MOP storyline was excellent, especially the first time through. There are quest mechanics and new narrative quest styles that you don't find anywhere else.
2. Pallies are no longer OP. Over all they have done an excellent job of evening out the classes. I have never leveled a warrior, but I have heard they are quite good.
I have leveled two pallys to 90, and it was pretty easy going. They nerfed Prot DPS quite a bit, so I went Ret had a much easier time of it. And don't even get me started on Holy. I respeced my shockadin to Ret after the first couple of days.
Come back! Get your MoP on before WoD hits! :)

1- Do you think leveling in MOP zones is fun?
Pandaria is a beautiful place with an outstanding storyline.
Leveling is leveling, "Need more bear asses!" "Hey hero of Azeroth a rabbit stole my carrots!" But the experience is seamless and more importantly there are plenty of fun quests and quest rewards.
I've leveled 12 toons to 90 now, I can honestly say when I have quested it has never been a chore.
2- got a warrior and a pally at lvl 85 in my frozen account, :P are pallys still the OP mofos they were? :P
Paladins are still very competitive, I wouldn't say OP, but example if you play Prot you are not going to die, the same can be said of other tank classes.
If you enjoy paladins then sure go for it, if not well there are tons of other great leveling classes available.

Come back! Get your MoP on before WoD hits! :)I also haven't played since Cata. Haven't bought MoP yet, should I really buy MoP now or should I just wait till WoD comes out since MoP will drop in price yet again. Dumb question but; will I still really need to even buy MoP when WoD releases?

Yes, to level from 85-90 you will need mop. Also, if you also want a monk, you will need mop.
