For the record, the lifespan page on Wowpedia lists the maximum age as "Unknown."

That wikipedia cannot be taken as canon in this instance. They say the Orc Maximum Lifespan is 80-90 (Rarely over 75).
In regardes to how much time has passed between say, the ending of the Burning Crusade to Mists of Pandaria... more than 100 years has gone by. The lifespan of an Orc Character created during Vanilla WoW has far exceeded their lifespan they assume is possible via books/lore.
There is no way to validate the actual lifespans, ergo, you cannot claim that chart is accurately portraying lifespans if one of the individual races in that chart is potentially incorrect.

Um, what? Mists of Pandaria takes place 29 years after the opening of the Dark Portal, the FIRST TIME. As in, the first war between Orcs and Humans.
Burning Crusade takes place 26 years after. 29 - 26 = 3. 3 != 100.

Drek'thar is in his 90's....and he was older then Durotan by at least 15 years in Rise of the Horde, which started about 20 years before the Dark Portal opened for the first time.

What is the RPG lifespan guide used for? Why isn't it considered canon?
Because Blizzard did not have hand in their creation; they gave the green light for them to be made, but they are the final word when it comes to what is and isn't canon, and so far only a few things have been canonized.

Questions like this could probably go in the general lore discussion thread, instead of making a thread just to ask what age someone lives to.
On topic though, I would think a trolls life span would be affected by their size. Like how little dogs have longer life spans than say, a great dane. But of course, there is always artificial ways to prolong a life in the fantasy universe.

If you had to guess, what would you say?
How much of that short lifespan is due to their regeneration ability compared to their savage lifestyle?
It wouldn't have anything to do with the regeneration ability; and would have to do with the savage liftestyle, the same way Hozen only live till they are about 20 or so due to their lifestyle choices.
