In the 5.0.4 thread started by perculia, I got involved in a bit about mana caps during leveling. I thought that a separate thread for that data would be nice to have so here it is ;)
Put your data in as you level so we can see.
On my belf spriest at 59 right after the patch I was at 4200. Last evening I dinged 60 and now I am at 4400.
I was just checking on the armory and forgot I dinged 61 so now have 4600.

Warlock 84 is 80k. Well, either that or I hit a really round number by random chance.
Edit: Tested it, and 80k is indeed the number.

Level 85 Belf Pally tank is 20k.
Level 85 Belf Priest healer is 100k (and same in Shadow spec).

85s of a class with both caster and non caster specs have 20k
base
mana. Those classes' caster specs then recieve a talent that increases mana pool by 400% bringing it up to 100k. Classes with only caster specs have 100k base mana.

This is nice, but there are questions for lower levels while leveling. So far, I have not found any listing of that, or my google-fu is failing me in finding this out.

Doesn't seem like that info is readily available, no, unless it's possible to query from the game. You might wish to wander over to Wowpedia and see if anyone there is doing the same inquiries you are. Even if they aren't, they (and by extension quite a few players) would probably be grateful for the data once complete as their articles on mana / base mana seem to lack MoP updates.
If there aren't any sneaky exceptions to what I wrote above data from one class that uses mana should suffice to fill in the model.
