Do you call it adorable?
Do you use magic to bind it to your will?
Do you promise it a steady supply of food?
Do you stare at it with a supper scary imposing look?
What the heck happens when the Tame Spell is being casted?

At the risk of being ridiculed, I'm going to take your question seriously and formulate my personal opinion.
I like to believe that Hunters are innately drawn to the wild, and spend so much of their time out in natural environments that the local wildlife slowly become accustomed to their presence. The Hunter respects nature's greatest beasts and over time learns how to track them, study them and even communicate with them to some degree. They slowly gain the trust of these wild animals and they in turn learn to not fear but respect the Hunter's kindness and willingness to learn.
They start bonding, and as this connection grows stronger and more intimate, the beast will ultimately allow the Hunter to challenge it for dominance. Should the Hunter succeed, the beast will recognise the Hunter's great strength and wisdom and submit to him, becoming his trusted friend and faithful companion for a lifetime.
I like to believe that
Tame Beast
symbolises the final step in this long process of bonding. It's the moment where the Hunter is allowed to challenge the beast for dominance, gaining his lifelong friendship and trust should he succeed.

I feed it the meat of its kin.
It's what the US meatpacking industries do.

Send in you application to Animal Planet, that sounded like it was straight out of a documentary. Explain what happens when mages conjure food now O.o

Oh cmon, it wasn't that bad of an explination.
Besides, there is no right answer to my question, so everyone can go in what ever direction others may deem strange.
@ Rensje,
while I see what you are trying to say, it still feels very vague and broad to me. What is it that a hunter does the tells animals the hunter wants to challenge it to a battle of dominance?
Why is this technique so universal that everything from bears to spiders to Wyms fall for it?
Is it simply that "a hunter" is the shiznic at studying animals to such a quick degree that he/she can communicate and build a relationship with the studied animal and that this process will often differ from animal to animal?

I use enough concussive shots to stun them, and then when they come to, I tell them that they're actually my long lost child...
... animals are dumb, so they don't question how a Troll had a crab for a son.

I'm thinking it's probably a dominance thing. A lot of animals will use elaborate displays and posturing to assert who is the dominant member of the social group, or chase each other away from territory or females, rather than actually engage in fighting all the time. Tame Beast = getting on the animal's level and displaying that you are the dominant member of the pack.

It depends on what kind of hunter your character is roleplaying as. You could challenge and dominate the pet through force of will, or possibly speak animal speak and make a "deal" with it, or give it food and make it a trusted companion etc. What kind of hunter are you roleplaying as?

So holding your hands out is the universal way of saying: I'm better than you?
=D.
