Gearing Your Paladin to 80 in Northrend: Just the FAQs, ma'am

Note -First edits are underway as I prepare lists for heroics and raiding at level 80. The raw data lists are having blue trash drops from instances added, along with pieces that I may have missed in the early rush to get the data available or that may have updated to WoWhead in the intervening time.

So, what's all this, then?
Those links will take you to lists of quest, crafted, and reputaton gear along with useful pre-heroic boss drops.
What's the point?
By putting all of that into an easily accesible form, we can do a number of things:
Locate that filler item we need that we weren't able to acquire pre-release
Determine whether we should be doing quests for our upgrades or dig through the Auction House
Decide where to spend those last few Badges of Justice
Avoid spending good gold on worthless crapola
Target the key Reputations you'll want to grind early

Everyone will want to gain rep with
The Sons of Hodir
- They have your shoulder enchants. 'nuff said.
Aspiring Holy Paladins will want to work with the
Kirin'Tor
, who provide a top of the line belt, and a very nice cloak. The
Wyrmrest Accord
is another good choice for the Gavel of the Brewing Storm, as is the
Argent Crusade
for the epic helm.
Prot likes the
Wyrmrest Accord
for the chestpiece and cloak, along with the
Kirin'tor
for Naxx-level gloves.
Ret will want to start with the
Knights of the Ebon Blade
for the Runeblade of Demonstrable Power, which should keep them happy until they can get an epic.
The Sons of Hodir
have your shoulders, if you need more pushing in that direction.
Wait, wait! Who gives the helm enchants?
They become available at revered with the proper faction.
Kirin'Tor - 30 Spellpower + 20 Crit
Wyrmrest Accord - 30 Spellpower + 8 mp5
Argent Crusade - 37 Stamina + 20 Defense
Knights of the Ebon Blade - 50 AP + 20 Crit
Any specific quests we should target?
Go Team Venture! There are daily quests in the Grizzly Hills that will acquire Venture Coins for you. Among the cheaper rewards are Librams directed at each of the specs that will be improvements for questing on whatever you're carrying... Unless you're soloing as Prot and have the Mother Shahraz Libram, but that's another issue entirely.
If you're considering tanking at all, you'll need to plan ahead. There are very few true tanking weapons available. With the exception of a single drop in the Halls of Lightning, the only ones that exist before Heroics are available through two quests:
Tiron's Gambit
and
Wanted: Ragemane's Flipper
Jewelcrafters should make an absolute point of getting their "Gem Perfection" quest done, as perfect gems will sell better and will certainly be an upgrade on all those BC epics you're sporting. As soon as you have access to them, start on the daily JC quest in Dalaran. You need to do those to get the higher end plans and your special gems and trinkets.
Is crafted gear any good?
Yes.
Those who want to go Prot and don't have a set from Outland will need to hit up a blacksmith for the Cobalt set as there are very few options as you step off of the boat. The rare Tempered Saronite crafted set will likely fill some slots in the late 70s, even for those with excellent BC epics, given the heavy emphasis on defense.
Every Paladin will be tripping over their Holy gear before too long. It's everywhere. But if you're planning on putting together a heroic and raiding set, the Brilliant Saronite crafted pieces will fill many holes. The Righteous pieces have extra Spellpower, but no Int or mp5, so are more questionable in a healing role. The Ornate pieces have Resilience and might suffice for a PvP set... but don't get them for instances.
Ret does poorly with crafted gear. The Savage Saronite pieces have Resilience, and there is a very limited number of options outside of it. Then again, if Holy plate is being tripped over, Ret plate is more like
Fibber McGee's Closet
. You'll have to run instances and rep grind for better gear.
Also, note that the various crafted epics that are on the lists require "Frozen Orbs". These are the WotLK version of Primal Nethers and drop only in heroic instances. However, they are apparently BoE from the get-go, meaning that you may be able to find them on the AH after a while. Every spec can benefit from these epics in numerous slots.

(BTW - DK opening area is pure ownage. Do the chains if you haven't)

More than the cost for the Libram. I believe I picked up 38 in the one day I did dailies out there, and the Librams cost 30 apiece.

Glyph of Sense Undead - crap
Glyph of Seal of Vengeance - expertize? u must be joking
I have to disagree with these two glyphs. Glyph of Sense Undead is a decent TPS boost against undead mobs (Glyph of Blessing of Wisdom is useless, just buy Symbols), and Glyph of Seal of Vengeance is much much better then Glyph of Seal of Blood because the extra 10 expertise will help a lot more then 1% more mana back when healed, especially with the new Blessing of Sanctuary.

Those are the ones I disagree with:
Taking Blessing of Wisdom? I've never used that on myself.
Lay on Hands - very very situational. And usually when you are running low on health and can't get heals for whatever reason, a little extra mana is not needed - the insane amount of damage you've taken ensures that the incoming heals will replenish your mana pool.
Seal of Blood? When has a tank used Seal of Blood/Martyr? Who on Earth would intentionally 1. lower their damage/TPS, and 2. increase the damage they take?
Glyph of the Wise is a solo Glyph.
BoK - I have BoK. And I am more than happy to use it. What, what spec are
you
using?
Sense Undead is actually a pretty nice Glyph. Naxxramas is full of undead mobs, and I find it pretty useless to have my
Find Minerals
on. 1% extra DPS, and almost 2% more threat...juicy.
Exorcism - not worthy? Again, Naxxramas and many Heroics full of undead who try to cast nasty spells. With Talanted HoJ, you get an interrupt every 15 seconds practically - something we've never had as paladins.
SoV is the single best Glyph for tanks. 10 Expertise gives you more threat (due to more hits not being dodged or parried) and more avoidance (due to fewer hits being parried by the boss, hence fewer refreshes of the swing timer).
