It all looks good. But i disagree on a couple minor points.
Main Hand Enchant: Executioner
Boots Enchant: Boars Speed
Ive seen some number crunching. Exec gives around 66TPS while mongoose gives around 33tps when they are up. The proc rates are the same. You lose negligable amount of armor, and some avoidance, for double the TPS. Since your entire post was all about 10/25man raiding, where STA and TPS are king, i was suprised you didnt recommend executioner over mongoose.
For the boots, you lose 3 stam, but you gain increased run speed. One thing people dont think about is sometimes you need to move around, or run to mobs (especially on trash), which would cause the increase in run speed to actually increase your TPS. Since you'll get to things slightly sooner than you would without it. Its mostly only usefull on trash pulls, but you dont lose much to get it. 30 health, MAYBE 40 with talents and buffs.
===========================================
You didnt mention anything about resiliance. For the most part, resiliance is worthless i know. But there are situations that make it viable. Like when your trying to stack up 300 frost or nature resistance for hydross, but you want to maintain crit immunity. Grab the S1 or S2 shield, and put a resiliance enchant on it, and it will easily fill in that gap to maintain crit immunity while keeping resistance high. Also if your using a resistance Chest piece, theirs a good resiliance enchant for chest pieces also.
==============================================
Your comments on expertise seemed to be a little misleading. It reduces your attacks' chances of being dodged AND parried. Thus being at the very least, twice as good as hit. Also its a mitigation stat since the less your attacks are parried, the less often the mobs attack speed increases. Expertise should be sought after over all other stats at this point in the game since there are so few tanking pieces that have expertise on them. Every tank raiding KZ or beyond should have the Brooch of Deftness and the Bracers of the Ancient Phalanx, which together are only 70 heroic badges. Even if you hate heroics and only want to raid you can do it in a month of clearing KZ.
=============================================
As far as gear recommendations go:
S1 shield is superior to crest of shatar, and shield of imp darkness, and should be the staple for every tank until you can get the shield from gruul. Much more armor, and stamina, and only slightly less block value than shield of imp darkness. Also once you do upgrade to Aldori, it then becomes a great shield for resistance fights to keep you crit immune through resiliance. And now you can get it without doing Arena. This is something you can easily obtain in one weekend of BG's. You lose defense rating, but like you said, once your over 490 the rest is a waist of itemization. And since resiliance gives you more bang for the buck as far as crit immunity is concerned, the base resiliance on the shield will give you a little cushion if you fall a little below 490.
Ranged: Khorium Destroyer
Gloves: Bonefist Gauntlets
Belt: Iron Tust Girdle
Legs: Unwaivering Legguards
Trinkets: Darkmoon Card: Vengeance (Best Trinket in game for all tanks. Most STA and TPS increase)
Darkmoon Card: Madness

I think I can speak for Yakra when I say, "Thank you" for your insightful feedback. I, too, became forced to re-think a couple of things (mostly about the part concerning the S1 shield).
-----
I would like to say that even though Executioner is nice for a main hand, depending on what you're doing Mongoose is still viable. I agree that Executioner is definitely for higher TPS, but I still use Mongoose on Blazeguard as it's really an off hand. Hopefully these thoughts will be taken into consideration & Yakra can implement them, with his own ideas, into the guide.

Well yea, if your holding onto suneater for non tankable boss's like Shade of Aran or Solarian, then put Mongoose on the OH and Exec on your MH. But i was speaking purely from a tanking perspective. If your focus is STA and TPS, you should have Exec on your tanking MH.
I did have mongoose on my sun eater while tanking KZ before i got my kings defender, because i knew once i did, i would want mongoose on it to use as an OH weapon during those types of fights. Saves you around 400g for an extra enchant.
For dual wield DPS, Exec MH and Mongoose OH is the best combo.

Just as a reminder,
Chestguard of the Stoic Guardian
has SPELL DAMAGE on it, thus making it a pally piece.
For something better than
Jade-Skull Breastplate
, you'd have to look into
Panza'Thar Breastplate
from Nightbane in KZ,
Warbringer Chestguard
from Magtheridon or
Chestguard of the Warlord
from Zul'jin in ZA.
I'd also recomend the whole Faith in Felsteel set, which is crafted and you can find it at the AH for around 30-50g a piece:
Felsteel Helm
Felsteel Gloves
Felsteel Leggings
Also the Heroic Badge Gear you can get from
G'eras
, and the Dungeon Set 3
Bold Armor
.
I started Kara with 3/5 D3 and tanked it like a breeze until Curator.

I'm sorry I believe my post was misunderstood. I'm by no means trying to bash your work, actually, as an experienced tank it enlightened me on many other aspects of tanking.
I just wanted to clarify the spell damage thingy because I've seen prot warriors wearing spell damage gems and new tanks might get confused.
You said you'd like recommendations or suggestions towards the pre-Kara gear list, thus I added the Felsteel and Bold sets, which are actually the best blues you can get before heroics.

Timewarden's Leggings
from Keepers of Time faction are better than Felsteel Leggings (or were in 2.1). There are also a few lengthy quest rewards that are very powerful, especially the ones from Tempest Keep. Felsteel is excellent to fill-in your newly 70 tanking suit to get these, though.

I prefer the
Felsteel Leggings
over
Timewarden's Leggings
because of the added armor, you can get STA back from gems and some dodge and hit rating. TankPoints also declares Felsteel are superior.
The Arcatraz Key quest will give you a belt
Sha'tari Vindicator's Waistguard
, which the forementioned sets don't have. There's
Jade-Skull Breastplate
from Mechanar and
Thatia's Self-Correcting Gauntlets
from Dalila at Arcatraz. Also, Grand Warlock Netherkurse drops
Greathelm of the Unbreakable
at the Shattered Halls.

Enchant: +120 Armor
I was relieved to see this, of course I should have known — it's you!
Nice list, hopefully we can pull from it.
btw I believe the Sha'tari waistguard requires a TK run, didn't check the link =0

Yakra, we maintain the same vision: to educate, prepare & proliferate good players into good warriors. To that end, you've been very inspiring to me.
OK, maybe the part about proliferation should be scratched for weirdness...
