At first I was going to write a response on another thread about which professions would be good to level with, but I decided to break off and write a different kind of thread, which I hope can be more over-all beneficial to this forum. All responses are meant for ALL Specs of Priests in PVE only.
There are constantly posts about "which professions are best for priests" and I figure I can help avert these repeat threads by writing one simply about which enhancements (from single profession) are BEST in slot including all Enchants/Item Enhancements/Abilities across the game. I'd like this to be another "community effort" post, so if I write something incorrect (I'm BOUND to do so!) please chime in and I'll edit the post to make it more correct.
I'll preface these lists by saying that I did not include a few professions, here's why:
Alchemy - Better flasks, not gear-related. All enhancements you gain are independent of gear enhancements.
Leatherworking - Nothing from LW is of significant use to a Priest of any spec except for
this.
Jewelcrafting - The bonuses from the gems can be placed in any item, making individual gear enhancement a non-issue, though this flexibility works quite well with a blacksmith, though the combination of the two still does not make it better than other combos..
So let's go one Slot at a time starting Head to Toe!

Head:There are really only
TWO CHOICES here, both are fine, depends on whether or not you're lacking in the mana regen department. Shadow and Disco will obviously want to choose Burning Mysteries, Holy may choose depending on needs, though I personally use Burning mysteries myself.

Shoulders:Inscription is clearly the winner here. Aside from Hodir
Rep rewards, the choice profession for shoulder enchants is Inscription. For mana regen, you'll use
this.

Back:Tailoring wins on the back front (lol) hands down. The best-in-slot enhancements win for both spell
OUTPUT in all specs as well as Mana
REGEN.

Chest:Regular enchanting as anybody would get is usually going to end up being
Powerful Stats. No single profession does anything additional to the chest piece except Jewelcrafting, which can add in their Dragon's Eye gems to any socketed item.

Wrist:The
LW option is an excellent choice, however being the singular benefit we get from LW, it may not be the choice profession to seek.
Blacksmithing comes in second for this fight as the
additional socket can stack on top of an enchantment, making it a wonderful choice for this slot.
For Standard Enchantment,
Superior Spellpower remains the choice for all 3 specs.

Hands:This is a topic which I have debated with other people and together we have concluded that the best profession enhancement for this slot is the Engineering
Hyperspeed Accelerators. It averages to a static 68 haste rating if used on EVERY cooldown, which is absolutely AMAZING for all priest specs. This enchantment, like the tailoring cloak enhancements, are so far above the competition, it may even be worth it to some to take on engineering simply for this enhancement.
In a close second is Blacksmithing because of the
Socket Gloves enhancement. You can stack on another enchantment as well.
Your other options for hand enchantment are the two
spellpower enchantments and
Precision (only if under hit cap). You could also go for
Blasting, but... why? Best of these, of course is 28 SP.

Fingers:Well, the ONLY profession that can even modify these slots is enchantment. They have
excellent options!

Belt:This slot really doesn't gain anything additional that any other player can get as the
eternal buckle is available to all players. The only profession that would gain in this slot would be Jewelcrafting from use of Dragon's Eye gem cuts.

Legs:Tailoring wins this category simply because their
leg enhancement costs them...
1g (if exalted). It is exactly the same stats as
Brilliant Spellthread.
Your other choices include SP/Stam threads,
neither of which is better for you than the above choices.

Feet:Again, here, I'd have to give it to Engineering for their
Nitro Boosts. Not only do you gain a great boost in Crit (higher than
Icewalker), you have an incredible "Use" ability that gets you out of sticky situations! Really awesome to use on the Heroic Anub'rak fight!
Regarding Non-Profession-specific enchantments of choice, I would vote for Tuskarr's Vitality for most unless you're under hit-cap for Shadow, or like the extra regen (I do!) from the + Spirit boot enchant as Holy.

Weapons:There really are no profession-specific weapon enchantments, but your choices are the following:
To my knowledge, the jury is still out on the debate on Black Magic for Shadow priests, though I suspect that 63/81 SP will still end up being superior.

So. there we have it. head to Toe, individual item enhancements that I consider to be "Best-In-Slot" enhancements for Holy/Shadow/Disco priests.
Gathering Professions also
have their advantages, but I think that the BEST combination of professions for end-game raiding is Tailoring + Engineering. Additionally, Engineering gives you
Injectors, which increases the effectiveness of your mana pots! Great for any mana-users!

Feet:Enchants are listed under Blacksmithing here.
Since the vast majority of enchants are not profession specific, perhaps another category for general item enhancements available to anyone would help to clear up any possible confusion.
Nice work either way, but seems to be a rather large post due to all of the N/A's. I'd suggest simply removing anything that isn't used and maybe bold the best choice to make it stand out more.
